BRIEF DESCRIPTION
We were asked to design a restaurant/franchise for a real client.
The client wanted the design to be fun as the food he was serving would be doner kebabs. A doner is a popular fast-food dish consisting of grilled meat served in pitta bread with salad and chili sauce, flavored with Turkish spices and marinated yogurt. It can be made from lamb, beef, or chicken. Doner kebabs are known for their affordability and deliciousness, often enjoyed as a late-night snack. I’m excited to present to you our team’s journey through the ideation stage and the process of creating the final floor plan for our project. We wanted to design a space that was not only functional but also visually appealing, so we explored various ideas and concepts to find the perfect fit. In the ideation stage, our team brainstormed various floor plans and furniture ideas to create a space that meets the needs of our project.
We started with bubble diagrams, which are rough sketches representing different areas and how they connect. This allowed us to visualize the flow and interaction between spaces. From the bubble diagrams, we progressed to creating more detailed floor plans. Each floor plan represented a different design concept, taking into account the feedback and preferences of our team members. These plans served as stepping stones towards the final design. We carefully evaluated the two floor plans that best represented our vision and began merging them together. By doing so, we were able to take advantage of the strengths of each plan and address any weaknesses or limitations they might have had individually.

PRECEDENT STUDY
According to Collins Dictionary (2023), a doner is a popular fast-food dish made of grilled meat, served in pitta bread with salad and chili sauce. It’s seasoned with Turkish spices and marinated yogurt. The meat is typically shaped into an inverted cone and can be made from lamb, beef, or chicken (Give Recipe, 2021). Doner kebabs are known for being affordable, delicious, and easy to order, making them a popular late-night snack option (SKH, 2023).
The love for doner kebabs in Germany can be traced back to the country’s post-World War II reconstruction efforts when Turkish nationals were invited to work in West Germany to support the economic recovery (Tasting Table, 2023). Over time, the popularity of kebabs spread to far-flung locations like Australia and Europe (Arlene, 2022).
Iskender Kebab, named after a chef from Bursa who invented the doner kebab, involves slicing bits of doner kebab into small square pieces of bread. Figure 1 shows a doner restaurant that offers an authentic street food experience with Iskender Kebab, chicken shawarma, and meat doners. They cater to both dine-in and takeout customers (Turkiye, 2020).
German Doner Kebab has expanded its presence in the UK by offering high-quality and fresh options. The CEO, Imran, emphasizes the importance of adapting to customer needs and disrupting the fast-casual dining space (Food Service, 2023). They have a modern dining environment with quick service times and a focus on healthy food. During the lockdown, they introduced the popular “Boss Box” concept for takeout (Food Service, 2023).
Figure 2 highlights the distinctive features of the restaurant, including trendy lighting and colorful tiles (Local World, 2023). The seating options range from two-seater tables to booths and bar stools, with power sockets available along the walls for customers to charge their phones or work. German Doner Kebab differentiates itself by offering kebabs with half the saturated fat compared to basic options like those found at McDonald’s (Local World, 2023).
